This is my personal recipe for Meatloaf that I've used for years and fine tuned to our tastes.

Ingredients
2 pounds ground beef or other ground meats (Venison, Turkey, Meatloaf Mix, combinations of ground meats, etc)
1 large onion diced
1-2 red bell peppers diced
2 eggs beaten
4 slices of white bread OR 1 cup italian bread crumbs
1/2 cup of milk (or enough to soak bread, only used if using bread and not bread crumbs)
1 tsp minced garlic
2 tablespoons Italian Seasoning
2 tablespoons Worcestershire sauce
2 tablespoons Steak Sauce
1 teaspon salt
1 teaspoon pepper
Topping
1 small can diced tomatoes
Diced Peppers
Diced Onions
1/2 - 1 tsp Worcestershire Sauce
Optional - 1 Tsp sugar to cut acid
Directions
Preheat Oven to 350°
Beat eggs.
IF using bread (this will make a much moister meatloaf, trust me) tear bread apart and soak in milk while preparing other ingredients.
Dice peppers and onions, set aside a small amount for topping.
Add seasoning, steak sauce, and Worcestershire sauce to egg, mix well. Pour over ground meat, add peppers and onions.
If using bread crumbs, add these, if using bread soaked in milk pour off milk and squeeze the bread to remove an excess milk and add to the meat mixture.
Mix all ingredients well. Form into loaf shape and place in a baking pan. Bake for about 1 1/2 hours, or until meat is cooked through completely. Oven times and temperatures can vary.
Topping
While meat is baking, put a can of diced tomatoes, the peppers and onions that you reserved, Worcestershire sauce and sugar if used, into a small sauce pan.
Bring ingredients to a boil and then simmer until some of the liquid is reduced, usually 15 minutes or so.
When the topping is the consistency you want, remove the meatloaf from the oven and pour topping over the meatloaf and spread. Continue baking until done.
The topping will carmelize when baking. If you do not want it carmelized then add it about the last half hour instead.
Once the meatloaf is done, let sit for about 5 minutes before serving. Store leftovers in an airtight container.

Note: If you prefer a brown gravy on your Meatloaf, don't add the topping and reduce the Worcestershire sauce to a teaspoon and don't add Steak Sauce. Use whatever gravy you like such as Brown Gravy or Beef Gravy.
