Raisin Rice PuddingYield: 6 servings
Ingredients - 1/2 cup rice
- 1 quart milk
- 1/2 cup seedless raisins
- 1/4 cup butter, or margarine
- 3 eggs, beaten
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- cinnamon
- nutmeg
Directions - Mix rice with 2 cups of the milk in the top of a double boiler; cook over hot water until tender.
- Add raisins and butter.
- Combine eggs, sugar, vanilla, salt, and remaining milk.
- Stir into hot rice mixture.
- Pour into a greased 1 1/2-quart baking dish.
- Sprinkle with cinnamon.
- Set in pan and fill pan half full of warm water.
- Bake in slow oven 325f, for 30 minutes or until set.
