4 large onions, thinly sliced
3 tbsp butter
1 tbsp olive oil
1 tsp sugar
1 tsp salt
4 cups beef or vegetable broth
½ cup dry white wine (optional)
1 tsp thyme
1 baguette, sliced
1 cup grated Gruyère or Swiss cheese
Instructions:
1. In a pot, melt butter and oil. Add onions, salt, and sugar.
2. Cook slowly (25–30 min) until deep golden brown.
3. Add wine (if using) and let it reduce.
4. Pour in broth and thyme; simmer 20–30 min.
5. Toast baguette slices, top with cheese.
6. Ladle soup into bowls, float toast on top, broil until bubbly.
