  Bettina Cake  Ingredients  
  • 1/4  cup  butter
  • 1  teaspoon  baking powder
  • 1/2  cup  sugar
  • 1/4  cup strained orange juice
  • 4    egg yolks
  • 1/2  teaspoon  orange extract
  • 7/8  cup  flour
  • 1/2  teaspoon  lemon extract

  Directions  
  • Cream the butter, add the sugar and mix well.
  • Add the egg-yolks which have been well beaten.
  • Mix and sift the flour, baking powder and salt, and add these, with the orange juice and the orange and lemon extracts to the first mixture.
  • Beat vigorously for two minutes.
  • Fill a twelve-inch square pan which has been prepared with waxed paper, with the mixture.
  • Bake thirty minutes in a moderate oven.
  • When cool, cover with the icing and cut into twelve pieces.

  Ingredients  
  • 1    egg white
  • 1  teaspoon  vanilla
  • 1  tablespoon  cream
  • 1/2  teaspoon  lemon extract
  • 2  cup  powdered sugar

  Directions  
  • Beat the egg-white, add part of the sugar.
  • Add the cream, vanilla and lemon extracts.
  • Keep beating.
  • Add the rest of the sugar gradually, a little more sugar may be needed.
  • Beat the icing till very fluffy and until it will spread without running off the cake.
  • Spread each layer.
