This quick and healthy vegetable stir-fry is perfect for busy weeknights. Start by heating 2 tablespoons of vegetable oil in a large wok or skillet over high heat. Add minced garlic and ginger, stirring for about 30 seconds until fragrant. Toss in your choice of vegetables such as bell peppers, broccoli, carrots, and snap peas, cut into bite-sized pieces. Stir-fry for 4-5 minutes until the vegetables are tender-crisp. Mix together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon sesame oil, then pour over the vegetables. Toss everything together for another minute, and serve hot over steamed rice or noodles.
