  GingerbreadYield: 3 layers nine inches square

  Ingredients  
  • 1 1/2  cup  evaporated milk
  • 1 1/2  tablespoon  vinegar
  • 1 1/2  quart  flour, (1 1/2 pounds)
  • 1 1/2  teaspoon  baking soda
  • 1 1/2  teaspoon  ginger
  • 1 1/2  teaspoon  cinnamon
  • 1 1/2  teaspoon  baking powder
  • 3/4  teaspoon  cloves
  • 3/4  teaspoon  salt
  • 1 1/2  cup  sugar, (3/4 pound)
  • 2 1/4  cup  molasses
  • 6    eggs
  • 1 1/2  cup soft shortening, (3/4 pound)

  Directions  
  • Mix evaporated milk and vinegar.
  • Sift flour, then measure.
  • Resift into mixing bowl with other dry ingredients.
  • Add molasses to the soured milk.
  • Stir into dry ingredients.
  • Add eggs, one at a time, and beat thoroughly, then add the shortening.
  • Pour into well greased layer cake pans.
  • Bake in a moderate oven (375f) 25 to 30 minutes.
