GingerbreadYield: 3 layers nine inches square
Ingredients - 1 1/2 cup evaporated milk
- 1 1/2 tablespoon vinegar
- 1 1/2 quart flour, (1 1/2 pounds)
- 1 1/2 teaspoon baking soda
- 1 1/2 teaspoon ginger
- 1 1/2 teaspoon cinnamon
- 1 1/2 teaspoon baking powder
- 3/4 teaspoon cloves
- 3/4 teaspoon salt
- 1 1/2 cup sugar, (3/4 pound)
- 2 1/4 cup molasses
- 6 eggs
- 1 1/2 cup soft shortening, (3/4 pound)
Directions - Mix evaporated milk and vinegar.
- Sift flour, then measure.
- Resift into mixing bowl with other dry ingredients.
- Add molasses to the soured milk.
- Stir into dry ingredients.
- Add eggs, one at a time, and beat thoroughly, then add the shortening.
- Pour into well greased layer cake pans.
- Bake in a moderate oven (375f) 25 to 30 minutes.
