Date CakeYield: 2 nine-inch tube cakes
Ingredients - 2 cup evaporated milk
- 2 tablespoon vinegar
- 3 1/2 cup flour, (14 ounces)
- 2 teaspoon baking soda
- 2 teaspoon cinnamon
- 1 teaspoon cloves
- 1/4 teaspoon salt
- 1 cup shortening, (1/2 pound)
- 2 cup sugar, (1 pound)
- 2 eggs
- 2 pound pitted dates, (1 quart)
- 2 cup nuts, (1/2 pound)
Directions - Mix evaporated milk and vinegar.
- Sift flour, then measure.
- Resift with other dry ingredients.
- Cream shortening.
- Add sugar and continue creaming until light and fluffy.
- Beat in the eggs.
- Add dry ingredients alternately with the soured milk, beginning and ending with flour.
- Add sliced dates and chopped nuts with last few stirs.
- Pour into 2 greased tube or loaf pans.
- Bake in a moderate oven (350f) about 1 hour.
