Doughnuts IIYield: 6 dozen doughnuts
Ingredients - 1 cup evaporated milk
- 1 cup water
- 2 tablespoon vinegar or lemon juice
- 6 tablespoon shortening, (3 ounces)
- 2 cup sugar, (1 pound)
- 4 eggs, beaten
- 8 1/2 cup flour, (2 pounds, 2 ounces)
- 1/4 teaspoon salt
- 1 teaspoon nutmeg
- 2 teaspoon baking powder
- 1 teaspoon baking soda
Directions - Combine milk, water and vinegar.
- Cream shortening, add sugar and continue creaming until light and fluffy.
- Add beaten eggs and mix thoroughly.
- Sift flour, then measure.
- Resift with remaining dry ingredients, and add alternately to shortening-sugar mixture with the soured milk.
- Roll dough to 3/8 inch thickness, cut with doughnut cutter and fry in deep, hot fat (365f).
- Drain on unglazed paper and roll in confectioners or granulated sugar.
