  Doughnuts IIYield: 6 dozen doughnuts

  Ingredients  
  • 1  cup  evaporated milk
  • 1  cup  water
  • 2  tablespoon vinegar or lemon juice
  • 6  tablespoon  shortening, (3 ounces)
  • 2  cup  sugar, (1 pound)
  • 4    eggs, beaten
  • 8 1/2  cup  flour, (2 pounds, 2 ounces)
  • 1/4  teaspoon  salt
  • 1  teaspoon  nutmeg
  • 2  teaspoon  baking powder
  • 1  teaspoon  baking soda

  Directions  
  • Combine milk, water and vinegar.
  • Cream shortening, add sugar and continue creaming until light and fluffy.
  • Add beaten eggs and mix thoroughly.
  • Sift flour, then measure.
  • Resift with remaining dry ingredients, and add alternately to shortening-sugar mixture with the soured milk.
  • Roll dough to 3/8 inch thickness, cut with doughnut cutter and fry in deep, hot fat (365f).
  • Drain on unglazed paper and roll in confectioners or granulated sugar.
