Raisin Rice Pudding

Raisin Rice PuddingYield: 6 servings

Ingredients
[*]1/2cuprice
[*]1quartmilk
[*]1/2cup seedless raisins
[*]1/4cupbutter, or margarine
[*]3    eggs, beaten
[*]1/2cupsugar
[*]1teaspoonvanilla
[*]1/4teaspoonsalt
[*]cinnamon
[*]nutmeg

Directions
[*]Mix rice with 2 cups of the milk in the top of a double boiler; cook over hot water until tender.
[*]Add raisins and butter.
[*]Combine eggs, sugar, vanilla, salt, and remaining milk.
[*]Stir into hot rice mixture.
[*]Pour into a greased 1 1/2-quart baking dish.
[*]Sprinkle with cinnamon.
[*]Set in pan and fill pan half full of warm water.
[*]Bake in slow oven 325f, for 30 minutes or until set.
