[*]1 can pumpkin, (1 pound, 13 ounces)
[*]1cupbrown sugar
[*]1cup white sugar
[*]1/4teaspooncloves
[*]3teaspooncinnamon
[*]2teaspoonginger
[*]1teaspoonsalt
[*]4 eggs, beaten
[*]1cupevaporated milk
[*]1cupheavy cream
[*]unbaked pie pastry, in deep 10-inch pan or two 9-inch pans
Directions
[*]Set oven for moderate, 350f.
[*]Combine first 8 ingredients; mi: well.
[*]Combine evaporated milk and cream; heat to scalding point, add; mix well.
[*]Pour into unbaked pie shell.
[*]Bake 1 1/4 hours for deep 10-inch pie; about 1 hour for 9- inch pies.
[*]Pie is done when knife inserted near rim comes out clean.
