Tomato & Egg Stir-fry
Ingredients:2 large eggs
1 large tomato
1 tablespoon oil
Salt and pepper to taste
Instructions:
Beat the eggs and season lightly with salt.
Heat oil in a pan over medium heat. Pour in the eggs and scramble until almost set; set aside.
Cut the tomato into wedges and cook in the same pan for 2 minutes until slightly soft.
Add the eggs back to the pan, mix gently, and cook until fully set.
Season with salt and pepper. Serve with rice or on its own.
Creamy Mushroom Toast
Ingredients:
- 1 cup mushrooms, sliced
- 2 slices of bread
- 1 tablespoon butter
- 2 tablespoons cream (or milk)
- Salt and pepper to taste
- Chopped parsley (optional)
Instructions:
1. Toast the bread until golden.
2. Melt butter in a pan and sauté mushrooms until soft.
3. Add cream, salt, and pepper. Cook for 2 minutes.
4. Spoon mushrooms over toast, sprinkle parsley on top, and serve immediately.
