Spice Cake Large BatchYield: 8 eight-inch layersIngredients
[*]6 1/4cupflour, (1 pound, 9 ounces)
[*]3 1/3tablespoonbaking powder
[*]1teaspoonsalt
[*]1 3/4cupshortening, (14 ounces)
[*]3 1/4cupsugar, (1 pound, 10 ounces)
[*]8 eggs
[*]2 1/4tablespoon mixed spices, soaked in 2 tablespoons boiling water
[*]1 1/4cupevaporated milk
[*]1 1/4cupwater, mixed with evaporated milk
Directions
[*]Sift flour, then measure.
[*]Resift with baking powder and salt.
[*]Cream shortening thoroughly.
[*]Add sugar and continue creaming until light and fluffy.
[*]Beat in the eggs, then the spices.
[*]Add dry ingredients and diluted milk alternately, beginning and ending with dry ingredients.
[*]Pour into greased layer cake pans.
[*]Rake in a moderate oven (375f) about 25 minutes.
