Quilting with knit fabric/ In need for ideas to use tshirt fabric

I have a TON of old tshirts which I don't want to throw away but don't wear anymore. I have been fantasizing of upcycling them into quilted fabric to either leave as a quilt or turn into quilted bags. The fabric is your classic tshirt fabric, 100% cotton jersey, little stretch, almost no recovery.
Has anybody quilted with knit fabric? Do you have any tips/ tutorials/ resources? I haven't ever quilted but I am interested in starting.
Would i need to stabilise the fabric first with interfacing? Or starch it? Is it even worth it?

Honestly the best thing I could do is turn those tshirts into rags but I already have enough rags. I could also make other clothing using the tshirts but I am having trouble finding patterns for this type of fabric (knit low stetch low recovery). So I am also looking for sewing pattern recommendations!!

Definitely stabilize the material first, otherwise it's going to stretch and be difficult to work with. I use a lightweight stabilizer and occasionally a medium weight.
