Fresh Greek Salad
This vibrant and refreshing Greek salad is a perfect summer side dish or light lunch. Start by chopping 4 large ripe tomatoes into wedges, 1 English cucumber into thick slices, and 1 red onion into thin rings. Cut 1 green bell pepper into strips and add it to a large bowl along with the tomatoes, cucumber, and onion. Top with 1 cup of crumbled feta cheese and about 20 Kalamata olives. For the dressing, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste. Drizzle the dressing over the salad and toss gently to combine. Let it sit for 10 minutes before serving to allow the flavors to meld together. This salad pairs wonderfully with grilled meats or can be enjoyed on its own.I love salads and feta (well most cheese) sounds good!
