Shortbread style cutout cookie
1 cup butter1 cup powdered sugar
2.5 cups of all-purpose flour
1 tsp of salt
2 tsp of cornstarch
1 tsp of baking powder
1 egg
2 tsp of vanilla extract
1/4 - 1/2 tsp of almond extract of desired (almond extract is very potent, do not add more than 1/2 tsp)
Let butter sit out for no more than 30 minutes, it needs to be cool but not cold.
Cut butter into cubes
Mix all dry ingredients, except powdered sugar, together in a separate bowl
Beat butter and powdered sugar together until well combined.
Mix egg and flavoring together then slowly pour into butter mixture and mix well. Add flour gradually and mix well
Refrigerate dough in a ball for at least 3 hours or roll out dough to desired thickness and refrigerate it covered on cookie sheets with parchment paper.
Bake at 350 for 9-12 minutes or until desired color
Dough may be refrigerated for up to 3 days
Baked cookies can be frozen up to 3 months in an airtight container.

I do too but you have to be careful because almond flavoring is super strong. I use it all the time in cake decorating and cookies but only a tiny amount. Thanks for sharing Oh! My favorite type of cookies to go with coffee. Thank you.:)
