Filled CookiesIngredients
[*]1 1/4quartbutter, (2 1/2 pounds)
[*]1 2/3tablespoonvanilla
[*]1 1/4quartsugar, (2 1/2 pounds)
[*]5 eggs
[*]3 3/4quartflour, (3 3/4 pounds)
[*]1/3cupbaking powder, (2 ounces)
[*]1pintevaporated milk
[*]1cupwater, mixed with evaporated milk
[*]jam, fig, or other filling
Directions
[*]Cream butter with vanilla.
[*]Add sugar and continue creaming until light and fluffy.
[*]Add eggs.
[*]Sift flour, then measure.
[*]Resift with baking powder.
[*]Add flour alternately with the diluted milk to the creamed butter and sugar mixture, beginning and ending with flour.
[*]Chill dough, then roll out and cut.
[*]Spread half of each cookie with 1/2 teaspoon jam.
[*]Fold over other half and press edges together.
[*]Place on greased baking sheets and bake in a moderate oven (350f) 8 to 10 minutes.
